Apple Friands

What a grand way to spend a Friday. Not only making friands, but eating them as well. Perfect for afternoon tea or just while grazing.

Ingredients:
  • 20 grams of butter
  • 1 medium sized apple: cored, peeled and diced
  • 3 egg whites
  • 80 grams of butter: melted and cooled
  • 1 cup of almond meal
  • 3/4 cup of icing sugar: sifted
  • 1/4 cup of plain flour: sifted **
  • extra icing sugar for dusting

Method:

  1. Preheat oven to 180 degree Celsius. Grease 6 friand pans with either non-stick cooking spray or butter.
  2. In a small saucepan, melt 20 grams of butter. Add the diced apples and cook until golden (approximately 5 minutes), stirring occasionally.
  3. In a non-reactive bowl, whisk the egg whites with a fork until they become frothy (do not form stiff peaks)
  4. To the egg whites, add the melted butter, almond meal, icing sugar and plain flour. Stir these ingredients until just combined. Add the apples and stir until combined.
  5. Spoon into the friand tins, filling them only three quarters of the way.
  6. Bake for 20 minutes (or until a skewer comes away clean).
  7. Let stand for five minutes before removing from the tins.
  8. Dust with icing sugar to serve.

**For a gluten free version, replace the plain flour with an all purpose gluten free flour.
