Ingredients:
- 20 grams of butter
- 1 medium sized apple: cored, peeled and diced
- 3 egg whites
- 80 grams of butter: melted and cooled
- 1 cup of almond meal
- 3/4 cup of icing sugar: sifted
- 1/4 cup of plain flour: sifted **
- extra icing sugar for dusting
Method:
- Preheat oven to 180 degree Celsius. Grease 6 friand pans with either non-stick cooking spray or butter.
- In a small saucepan, melt 20 grams of butter. Add the diced apples and cook until golden (approximately 5 minutes), stirring occasionally.
- In a non-reactive bowl, whisk the egg whites with a fork until they become frothy (do not form stiff peaks)
- To the egg whites, add the melted butter, almond meal, icing sugar and plain flour. Stir these ingredients until just combined. Add the apples and stir until combined.
- Spoon into the friand tins, filling them only three quarters of the way.
- Bake for 20 minutes (or until a skewer comes away clean).
- Let stand for five minutes before removing from the tins.
- Dust with icing sugar to serve.
**For a gluten free version, replace the plain flour with an all purpose gluten free flour.
